• 3 large tortillas
• 1 cup shredded mozzarella cheese
• 1 cup chopped fresh spinach
• ⅓ cup diced red onion
• 1 cup diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
• ½ cup feta cheese
• pepper, to taste
Cut the tortillas in half (keep whole for larger baskets). On one side, layer with mozzarella, spinach, red onion, tomato, feta, and more mozzarella. Season with a little pepper. (Or, layer with your favorite combination of cheese, vegetables, and quesadilla fillings)
Fold in half again. Insert a toothpick into the tip to secure.
Spray the air fryer basket with oil. Place as many quesadillas as fit into the basket (it’s okay if they slightly overlap). Spray the tops lightly with oil. You may need to cook them in batches, depending on how big the basket is.
Set the air fryer to 375° for 5 minutes. Remove toothpicks and flip halfway through. If tortillas are not browned to your liking after 5 minutes, continue to air fry in 1 minute increments. Remove from the basket using tongs and let cool before serving.
