BEAN AND HAM HOCK SOUP

ingredients

°450 g dried mixed beans
°2 teaspoons olive oil
°120g smoked, spotted or bacon, cut into cubes
°1 medium onion chopped
°2 chopped carrots
°4 garlic cloves
°1 small green bell pepper, cut into cubes
°2 celery stalks chopped
°2 green onions cut into cubes
°60g finely chopped coriander
°180 ml tomato sauce
°a little ground cumin
°a pinch of salt
°1 teaspoon crushed black pepper
°1 sprig of rosemary
°2 sprigs thyme

steps: 1. Rinse beans also soak them overnight.
Discard the soaking water the next day and put the new water to boil in a saucepan.
Cook the beans, uncovered, for an hour over a medium heat.

2. Meanwhile, heat a large saucepan over medium heat, pour in oil and grill meat for 2 minutes, then add onion, carrot, garlic, green pepper, celery, green onion, coriander, tomato sauce, cumin, and salt.  Pepper and cook for another 5 minutes.
Then add the cooked and drained beans along with the rosemary and thyme.

Reduce the heat, cover and leave the mixture for an hour, stirring occasionally.

Remove the cap and increase the heat. Simmer over low heat until thickened, about 15 minutes, while beans are cooked through. Enjoy !
