°3 – 4 pounds chicken parts (bone-in, skin on thighs and chest work well)
° 2 tsp of olive oil
°1 C seedless grapes
° 1 c finely chop almonds (optional)
°1 celery stalk
°4 green onions, thinly slice, white // green
° 2 tsp chop fresh dill
° 1 tsp fresh chopped parsley
°1 c mayonnaise
° juice 1 lemon
° 1 tsp of Dijon mustard
°1 tsp kosher salt
° ground pepper
* Methods :
Preheated oven 350 degrees Fahrenheit.
Rub chicken pieces with oil & brush them with salt & pepper.
Baking for 36 to 46 min.
We remove the chicken from the heat and let it cool, then remove the meat from the bones and chop it coarsely.
In bowl, blend chicken/grapes/almonds/celery/scallions/dill and parsley.
In a bowl, mixing mayonnaise/lemon/mustard/salt also pepper.
Adding blening mayonnaise to chicken mixture & stir gently to combined.
Refrigerate for at least an 1h.
Served on a bed of green leaves with sliced tomatoes and avocado. Add more as per your taste!
