This is the first dish I turn to when I have a surplus of tomatoes. It’s similar to stuffed peppers, except the tomatoes stay cold and fresh instead of being baked. Each one is filled with seasoned ground beef, browned onions, lettuce, shredded cheese and the insides of the hollowed-out tomatoes for a quick and inexpensive meal that everyone enjoys. 1 packet Taco Seasoning
Fiesta Mexican blend Shredded Cheese

How to prepare
Cut an “X” shape into the top of each tomato and pull them apart gently. Then brown your hamburger, and add in the taco seasoning.
Fill the bottom of each tomato with lettuce, then the taco meat, onion, and shredded cheese. Top with sour cream. Serve!
