° 2 lbs of lean ground beef
° 1 white onion, peeled and diced
° 1/4 t ground black pepper
° 1/2 teaspoon dry thyme, to taste
° 1/2 t dried basil
° 1/4 teaspoon seasoning salt
° 1 (1 1/2 ounce) packaged onion soup mix
° 6 cups of water, of desired consistency
° 1 can tomato sauce
° 1 t soy sauce
° 1 (15 oz) can diced tomato
° 1 (15 oz) can of drained corn
° 1 cup chopped celery
° 1/4 c coarsely chop celery leaves
° 1 cup chopped fresh carrots
° 1 cup white potatoes, peeled and cut into small cubes
° Salt garlic to taste
° Shredded Parmesan cheese, to serve
° Sour cream for serving
Brown ground beef and onions in a large saucepan. Drain if necessary.
Add spices and onion soup mixture.
Add water, tomato sauce and soy sauce. Bring to a boil & reduce heat, covering and simmer for 15 mn.
Add the rest of the ingredients to the potatoes and let it boil. Reduce the heat, and simmer until the potatoes and carrots are soft, 30 minutes. (Add more water if needed).
Season to taste with garlic salt.
Served with shredded parmesan cheese and sour cream.
