°Bacon fillet (about 1/2 cup)
°2 pounds russet potatoes, peeled and diced (about 4 to 5 pounds)
°1/2 c sweet onion, finely chop
°Seasoning with salt and pepper to taste.
Heat a 10-inch skillet on heat with just bacon to coat the bottom.
Seasoning potatoes and onion with salt and pepper to taste, then mix to covering with oil.
Removing lid, turning pieces also cooking uncovered over medium-high heat, turning and stir periodically, until potatoes are golden brown. Seasoning with salt also pepper to taste.
It’s great with eggs, but it’s also fantastic side dish for any occasion.
