- 1 to 2 large sweet potatoes
- 1 premade pie crust, do not use graham cracker
- 1 tsp vanilla extract
- 2 eggs
- ½ cup butter, softened and browned
- ⅔ cup white sugar
- ⅓ cup brown sugar
- ½ cup of milk
Wash the Sweet potato and pierce the potato a few times with the tines of a fork.
Place the potatoes on a baking sheet and place in the oven to bake for 45 minutes to an hour, with the oven set at 350* Bake until soft.
Remove from the oven and set aside to cool for a few minutes
Scoop out the inner portion of potatoes and place into a bowl.
Add the butter, white sugar, brown sugar and the vanilla to the sweet potatoes
Beat on high until combined and smooth
Add the eggs and beat again until incorporated
Preheat the oven to 375*
Pour the mix into the prepared pie crust
Bake for 40 to 50 minutes until the pie is set.
You can cool until ready to serve or serve it warm.
